Whole30 Sweet Potato & Kale Sautée with Eggs

Ingredients

  • 2 Tbsp olive oil

  • 1 cup diced sweet potato

  • 1 handful curly kale

  • 1/4 diced onion

  • vegetable broth as needed

  • 2 eggs

  • salt & pepper to taste

Directions

Put olive oil in a skillet and heat it up till water sizzles in it. Add the onions and sweat them, about 1 minute. Add the sweet potatoes in with the onion and mix together, then put a lid on the skillet so the sweet potatoes can cook a bit. After about 5 minutes, the onions and sweet potato will be caramelized on the bottom. Add broth to deglaze. Do this as often as you need until the sweet potato is soft and nearly cooked all the way.

Add the kale to the pan and mix with the onion and sweet potato. Push the mix to the side and add the two eggs to the pan. Salt and pepper the eggs, then put the lid on, turning down the heat to medium low. When the eggs are cooked to your preference, remove the lid and plate.

Add half of an avocado, sliced, to the plate and serve.
